Sparkling Peach Honey Cooler Two Ways

Summer in a glass: fresh peaches, local honey, a squeeze of lemon, and a handful of mint, all topped off with sparkling water. Bright, fizzy, and endlessly refreshing, this one works as a zero-proof mocktail or a full-on cocktail with a splash of bourbon. Either way, it's the drink your cookout table didn't know it was missing.

Ingredients

Peach Honey Base

2 ripe peaches, sliced
1 tablespoon honey
1 tablespoon fresh lemon juice
6 to 8 fresh mint leaves

For the Mocktail Version

3 tablespoons peach honey base
Ice
Sparkling water, to top
Fresh peach slice or mint sprig, for garnish

For the Cocktail Version

2 tablespoons peach honey base
2 ounces bourbon
Ice
Sparkling water, to top
Fresh peach slice or mint sprig, for garnish

Directions

Add the sliced peaches, honey, lemon juice and mint to a glass or cocktail shaker.

Muddle gently until the peaches release their juices and the mint becomes fragrant. The mixture should be juicy and slightly syrupy, not fully puréed.

For the mocktail version, add 3 tablespoons of the peach honey base to a glass filled with ice. Top with sparkling water and stir gently.

For the cocktail version, add 2 tablespoons of the peach honey base and bourbon to a glass filled with ice. Stir, then top with sparkling water.

Garnish with a fresh peach slice and/or mint sprig.

Serve immediately.
